Kid Cooking

I just made some cookies with Maggie and they turned out great so I thought I would share. This recipe is great for kids b/c they can help roll out the dough and (depending on age) cut out shapes with cookie cutters. It's also made with two-thirds whole wheat flour, honey, and brown sugar, so it's not quite as refined as regular cookies. They're mildly sweet and Grant says they taste like a combination of sugar cookies, graham crackers, and gingersnaps. So there you go! And here's the recipe:

Alphabet Cookies

1 cup graham flour
1 cup whole-wheat pastry flour
1 cup all-purpose flour
1 t ground cinnamon
1 t baking powder
½ t baking soda
¼ t salt
½ cup (1 stick) unsalted butter, room temperature
½ cup firmly packed light-brown sugar
¼ cup honey
1 t pure vanilla extract
½ cup milk

1. In a medium bowl, sift together flours, cinnamon, baking powder, baking soda, and salt; set aside.
2. In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and brown sugar on low speed 1 minute. Add the honey and vanilla, and beat to combine. With mixer on low speed, add the flour mixture in two batches, alternating with the milk, beginning and ending with the flour.
3. Divide dough into three pieces. Roll out each piece of dough between parchment or wax paper to 1/8 inch thick. Stack the packages of dough on a baking sheet, and freeze for 1 hour.
4. Preheat oven to 300. Remove one-third of dough from freezer, and gently remove top parchment paper. Peel off and discard the top parchment paper. Cut out cookies using 3-inch alphabet cutters. Remove excess dough. Reroll any dough scraps between parchment paper, and cut out cookies. Bake until lightly browned, 20-25 minutes. Transfer to wire racks to cool completely. Repeat with remaining dough.

sounds yummy. cole loves weatching the mixer, we'll have to try this one.
